Vegan Brownies

These vegan brownies are made with melted dark chocolate, making them extremely chocolatey and fudgy, but not overly sweet. Best eaten slightly warmed so the chocolate chips inside are gooey.

Makes 12-16


  • 100g dark (70%) chocolate chips or chunks
  • 150g vegan butter
  • 15ml strong coffee*
  • 200g plain flour
  • 50g cocoa powder
  • 1 tsp baking powder
  • 100g light brown sugar
  • 100g golden caster sugar
  • 250ml unsweetened non-dairy milk
  • 2 tsp vanilla extract
  • 200g semi dark (50-60%) chocolate chips or chunks

*I mix 1 tbsp instant coffee (caffeinated or decaffeinated) with 1 tbsp hot water


  • Line an 8x8 inch square tin. Preheat the oven to 180C/360F fan.
  • Melt the chocolate, butter and coffee in a bowl over simmering water. Set aside.
  • Mix the plain flour, cocoa powder, baking powder, light brown sugar and caster sugar together in a large bowl.
  • Pour in the milk and vanilla extract, and mix until just combined. Fold in the melted chocolate mixture followed by 150g semi dark chocolate chips.
  • Pour the mixture into the lined tin and sprinkle the remaining 50g of chocolate chips over the top. Bake for 20-22 minutes, the middle should still look soft. Once baked, leave in the tin to cool completely.
Keep wrapped up in an airtight container as one whole piece for up to 4 days, or cut into pieces and freeze for up to 2 months.
