Vegan Christmas Biscotti

These biscotti have all the festive ingredients. Filled with dried fruit, nuts and warming spices, they are the perfect Christmas snack to go with a hot cup of coffee.

Makes about 35


  • 350g plain flour
  • 2 tsp baking powder
  • 2 tsp mixed spice
  • 160g golden caster sugar
  • zest of 2 oranges
  • 120ml unsweetened non-dairy milk, room temperature
  • 50g coconut oil, melted
  • 2 tsp vanilla extract
  • 100g dried cranberries
  • 50g whole blanched almonds
  • 50g shelled pistachios


  • 1. Line 2 baking sheets. Preheat the oven to 160C/320F fan.
  • Mix together the flour, baking powder, mixed spice, sugar and orange zest. Add the milk, melted coconut oil, and vanilla extract. It will look dry at first but knead it with your hands until it comes together.
  • Add the dried fruits and nuts, and knead in until evenly distributed.
  • Divide dough into 4 equal pieces and roll each one into roughly 20x5cm logs on a floured surface and place them spaced apart on the baking trays.
  • Bake for 25-30 minutes until risen and feels firm to touch very light brown in colour. Leave to cool for 10 minutes and turn the oven down to 120C/250F fan.
  • Using a sharp serrated knife, cut diagonal slices about 1-2cm thick. Let the knife do the work, don't force it or the slices could break. Lay slices on the baking trays and cook for 15-20 minutes or until dry to touch, then turn the slices over and bake for another 15-20 minutes, or again until dry to the touch.

Stores for up to 2 months in an airtight container.
