Vegan Spiced Apple Loaf

This apple loaf packs 4 apples in total! With warming spices and maple syrup coated pecans, it's sure to become a quick favourite.

Serves 10-12

Ingredients:

  • 50g pecans, chopped
  • 1 tsp ground cinnamon
  • 30ml maple syrup

  • 250g plain flour
  • 160g light brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 160ml unsweetened non-dairy milk
  • 100ml light oil
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 4 eating apples, peeled and chopped

Instructions:

  • Preheat the oven to 170C/340F fan. Line a 2lb loaf tin.
  • Mix together the topping ingredients and set aside.
  • Mix together the flour, sugar, ground cinnamon, mixed spice, baking powder and bicarbonate of soda. Add all the wet ingredients and stir in to make a thick batter. Fold in the chopped apples and pour into the lined tin. Spoon the topping ingredients on top, covering as evenly as possible.
  • Bake for 60-75 minutes, or until a skewer inserted into the middle comes out clean. If the top is browning too quickly, cover with foil after 30 mins.
  • Leave to cool in the tin for 10 minutes before carefully turning out onto a wire rack to cool completely.
Store in an airtight container for up to 4 days, or slice and freeze for up to 2 months.
