Vegan Tea Loaf

An easy and healthy tea time snack that's indulgent and fat free, if you resist the urge to spread butter on it (although it's highly recommended).

Total time with soaking = 24+ hours

Serves 12-14

Ingredients:

  • 135g raisins
  • 135g sultanas
  • 135g currents
  • OR 400g dried mixed fruit of your choice
  • 250ml strong brewed tea*
  • 225g self raising flour
  • 50g light brown sugar
  • grated zest of 1 orange
  • 75ml unsweetened non-dairy milk

*brew 2 teabags (caffeinated or decaffeinated) for about 5 minutes.

Instructions:

the night before

  • Mix the fruits in a medium bowl and pour over the tea. Cover and leave overnight.

on the day

  • The next morning, preheat the oven to 160C/320F fan. Line a 2lb loaf tin.
  • Mix the flour, sugar and orange zest in a large bowl. Add the milk and soaked fruits, including any liquid remaining, and mix until combined. If the mixture looks a bit dry, add more milk a tablespoon at a time. Spoon into the lined tin and spread level.
  • Bake for 45-55 minutes or until a skewer inserted into the middle comes out clean. Leave to cool in the tin for 15 minutes then transfer to a wire rack to cool completely.
Store in an air tight container for up to 5 days, or slice and freeze for up to 2 months.
